Confit vegetables
Looking for the perfect side dish or vegetarian option? Confit vegetables are perfect to have all you vegetables full of flavors.
Ingredients
- 4 carrots
- 2 turnips
- 2 celeriac
- 100 g Brussels sprouts
- 5 jerusalem artichokes
- 3 parsnips
- 4 garlic cloves
- 2 red onions
- Olive oil
- Salt/ pepper
Method
- Peel all vegetables
- Cut vegetables into smaller pieces for larger vegetables such as carrots, celeriac and turnips to ensure cooking will be even for all vegetables.
- In a mixing bowl, add all the vegetables, olive oil, salt and pepper
- Mix together to ensure all vegetables are covered
- Place in an oven dish and cook in the oven for 20 minutes at 180 degrees
