Veal sweetbread

Ingredients
- 2 kg sweetbreads
- Rock salt & pepper
- Water
- 2 Garlic cloves
- Thyme and rosemary
- Chickpea flour
- Clarified butter
Method
- Start to cook the sweetbreads slowly in cold water with seasoning
- When the water is boiling wait for 2 minutes then remove from heat and cool on the side for 15 minutes
- Remove the skin and clean them
- Keep the trimmings and roll the sweetbread with pepper on the presentation side
- Put them on ice
- At the last minute before cooking, dry and roll the sweetbread in the chickpea flour
- Cook in clarified butter slowly until a nice colour
- Chop up the trimmings and cook the same way
